6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white vinegar
salt, to taste
paprika, to garnish
Directions
- Place eggs in a single layer in a saucepan and cover with 1-2 inches of cold water. Heat on high until the water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 10-12 minutes, then rinse under cold water for 1 minute.
- Carefully peel the under eggs under cold water. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter or plate.
- Mash the yolks with a fork and add the mayonnaise, mustard, vinegar and salt. Mix everything well together until it’s smooth.
- Spoon or pipe a portion of the deviled egg mixture back into the hole of each egg white. Dust with paprika for garnish.
