Spaghetti Carbonara

2 tbsp olive oil
3/4 cup of bacon or pancetta cut into matchsticks
1 clove garlic, crushed
1 lb spaghetti
4 eggs, at room temperature
3/4 cup freshly grated parmesan cheese
salt, to taste
freshly ground black pepper
Directions
- Bring a large pot of water to a boil.
- While the water is being brought to a boil, in a medium frying pan, heat the olive oil and fry the bacon and the garlic until the bacon begins to brown. Remove and discard the garlic. Keep the bacon and its fat hot.
- Add the spaghetti to the boiling water and cook according to the package directions.
- While the pasta is cooking, break the eggs into a large bowl. Beat in most of the the parmesan cheese with a fork, and season with salt and pepper.
- As soon as the pasta is done, drain it quickly, reserving the pasta water.
- Working quickly, add the pasta to the egg mixture. Pour on the hot bacon and stir well. The heat from the pasta and bacon will cook the egg and parmesan mixture. If necessary, add a little of the reserved pasta water (tablespoon by tablespoon) and mix well until a silky consistency is reached. Garnish with the remaining parmesan cheese. Serve immediately.
Notes
- The heat from the pasta and bacon cooks the eggs.
