2 tablespoons olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 garlic clove, crushed
1 celery stick, finely chopped
12 oz ground beef
2/3 cup red wine
1 cup milk
1 14oz can chopped tomatoes
1 tablespoon tomato paste
12oz spagetti
salt
black pepper
fresh basil, to garnish
grated parmesan cheese, to serve
Directions
- Heat the olive oil in a large pan over low to medium heat.
- Add the onion, carrot, celery and garlic to the pan. Gently fry, stirring often for 10 minutes until the vegetables soften.
- Add the ground beef to the pan and cook over medium heat until the meat is browned. Stir often with a wooden spoon. Break up any lumps.
- Add the wine, stirring often until it has evaporated.
- Add the milk, stirring often until it has evaporated.
- Add the tomatoes and tomato paste and salt and pepper to taste. Reduce the heat to low and simmer uncovered for at least 50 minutes.
- Boil a large pan of water and cook the spaghetti according to the package instructions. Drain the spaghetti and either stir into the bolognese sauce, or serve the sauce on top. Garnish with basil leaves and serve with grated parmesan cheese.
Notes
- The longer the sauce cooks, the better.
