Omelette with Herbs

3 large eggs, at room temperature
A few sprigs of parsley, chives, chevril and tarragon
2 tablespoons of butter
Salt and pepper, to taste
Directions
- Chop the herbs.
- Break the eggs into a bowl, add a pinch of salt and pepper and whisk lightly with a fork.
- Add the chopped herbs to the whisked eggs.
- Heat the butter in a medium-sized non-stick pan over medium-high heat until it foams.
- Pour the egg mixture into the pan and gently swirl to distribute. Reduce the heat. Cook for about 1 minute or until the eggs are set.
- Fold one side of the omelette over towards the other and remove it from the heat. Plate immediately.
