Ingredients

  • 3 large eggs, at room temperature

  • A few sprigs of parsley, chives, chevril and tarragon

  • 2 tablespoons of butter

  • Salt and pepper, to taste

Directions

  • Chop the herbs.
  • Break the eggs into a bowl, add a pinch of salt and pepper and whisk lightly with a fork.
  • Add the chopped herbs to the whisked eggs.
  • Heat the butter in a medium-sized non-stick pan over medium-high heat until it foams.
  • Pour the egg mixture into the pan and gently swirl to distribute. Reduce the heat. Cook for about 1 minute or until the eggs are set.
  • Fold one side of the omelette over towards the other and remove it from the heat. Plate immediately.
