Deviled Eggs

Ingredients

  • 6 large eggs

  • 3 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 teaspoon white vinegar

  • salt, to taste

  • paprika, to garnish

Directions

  • Place eggs in a single layer in a saucepan and cover with 1-2 inches of cold water. Heat on high until the water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 10-12 minutes, then rinse under cold water for 1 minute.
  • Carefully peel the under eggs under cold water. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter or plate.
  • Mash the yolks with a fork and add the mayonnaise, mustard, vinegar and salt. Mix everything well together until it’s smooth.
  • Spoon or pipe a portion of the deviled egg mixture back into the hole of each egg white. Dust with paprika for garnish.
