Ingredients

  • 1 lb uncooked shrimp, shelled and deveined

  • 1 lb spaghetti

  • 2 pints cherry tomatoes, halved

  • 6 garlic cloves, minced

  • 6 tablespoons butter

  • 2 tablespoons olive oil

  • 1/4 lemon

  • 1/4 teaspoon salt

  • 3/4 cup fresh parsley, loosely chopped

  • 3/4 cup grated parmesan cheese

Directions

  • Bring a large pot of water to a boil.
  • Cook the spaghetti in the pot according to the package directions.
  • While the spagetti is cooking, heat a large skillet on medium-high heat.  Add 2 tablespoons butter and 2 tablespoons olive oil.
  • Add fresh shrimp and half the minced garlic to the skillet. Cook for 1 minute on each side. The shrimp should be pink on each side.
  • To the skillet with shrimp, add chopped fresh tomatoes and the rest of the minced garlic. Mix everything well.
  • Add the cooked pasta to the skillet with the remainder of the butter. Stir in the chopped parsley and mix well.
  • Add freshly squeezed lemon juice and mix well.
  • Add salt and warm up on medium heat until the shrimp is thoroughly cooked.
  • Mix in the grated parmesan cheese.
