Tiramisu

3 eggs, separated
2 cups mascarpone cheese, at room temperature
1 tablespoon vanilla sugar
3/4 cup cold espresso or very strong black coffee
1/2 cup Kahlua
18 Italian ladyfingers (savoiardi)
cocoa powder for dusting the top
Directions
- Place the egg whites in a bowl and whisk on medium speed with a mixer until the egg whites are in peaks.
- In a separate bowl, mix the mascarpone, vanilla sugar and egg yolks with a mixer. Gently fold in the whipped egg whites.
- Combine the coffe and Kahlua in a bowl. Quickly dip a ladyfinger in the coffee and Kahlua mix, getting it wet on both sides, but not so that it starts to disintegrate. Place the ladyfinger in a shallow 9 inch square baking dish, or similarly sized container. Add more dipped ladyfingers, laying them side by side, until there is a layer of ladyfingers in the baking dish.
- Smooth half of the mascarpone mixture over the top of the layer of ladyfingers. Add another layer of dipped ladyfingers, then smooth the remaining mascarpone over the top of the second layer.
- Sift cocoa powder generously over the top. Cover and refrigerate for at least 3-4 hours or up to overnight before serving.
Notes
- Tiramisu will keep in the refrigerator for 2-3 days.
